Our Story

Brasserie Benelux is a casual, European-inspired neighborhood 144 seat restaurant with a private event room located on Broadway in the center of historic downtown Saratoga Springs, New York.
Saratoga Springs, famous for its legendary horse race track, outdoor SPAC concert venue and natural historic Springs, draws millions of visitors yearly from all over the world.

We are proud and it has been our life long dream to be part of the Saratoga Culinary community with Brasserie Benelux. In past years prior, operational partner Chef Armand Vanderstigchel, inspired by his arrival in Saratoga Springs in early 1994, traveled throughout the North Country region promoting and writing his book” Adirondack Cuisine”, featuring his own recipes as well those from local culinary establishments who were pioneers in the local product sourcing revolution.

The great success of the book spawned a PBS Mountain Lake television show “Adirondack Cuisine”, in which Chef Armand and PBS Host Derek Muiden from Road side Adventures, produced multiple series which aired successfully in New York State, Vermont and Canada.
Brasserie Benelux’s food comes from the traditional beer cultures in Europe. 

Chef Armand Vanderstigchel (USA born), a son of Dutch immigrant, who also lived in the Netherlands for 17 years, has turned his focus on Benelux Cuisine, or more specifically, regional Belgian and Dutch food culture, expanding into German, Austrian, Polish, Belarusian, Alsatian, Czech, Scandinavian and local American intonations stemming from the Hudson Valley and Adirondacks. Featured dishes as Belgium Mussels, Beer braised Short Ribs, Belgian Waffle/Crepes, Wiener Schnitzels and Sausage Platters await you.

Our goal is to satisfy varied cultural appetites by using sustainably local products and artisanal house-made and purchased products in our seasonally evolving menu matched with European style beers as well local craft beers with a compelling list of carefully hand-picked European and Californian wines.

Our name is derived from the French word “brasser” which means to brew, and brasserie which means brewery. In Europe, especially Belgium, a brasserie is a type of restaurant that evolved from Alsatian breweries that serve alcohol (typically beers) – an unpretentious restaurant serving quality regional hearty food from European countries with a strong beer culture.

Chef Armand Vanderstigchel and his culinary staff prepares his food from scratch on-premise, using fresh, high-quality ingredients. While we are inspired internationally, we source locally where we can.
As author of two nationally published cookbooks “Adirondack Cuisine” and “Chicken Wings Across America”, it is no surprise to find Chicken Wings on the menu as well hearty comfort food dishes with Alpine distinctions. In 2019, Chef Armand- an official judge and ambassador for the yearly national Buffalo Wing festival in Buffalo, NY- was inducted into the national “Chicken Wing Hall of Fame” for his contributions to the restaurant community as author and spokes-person for Franks RedHot sauce.
We will serve lunch and dinner daily according to our seasonal schedule, and feature a European style Sunday Brunch during Track Season. An outdoor Café will be opened during Spring/Summer/Fall.
